Technically the hulled seeds of the buckwheat plant, buckwheat is a pseudocereal with many grain-like properties. First cultivated over 8,000 years ago in Southeast Asia, it was one of the first crops introduced to North America by early European settlers and remains a culinary staple in Eastern Europe and the Balkans.

Despite its name, buckwheat contains no wheat or gluten and is actually a common ingredient in many gluten free recipes. Rich in fiber, protein, and complex carbohydrates, buckwheat is also an excellent source of vitamins and minerals, particularly magnesium, copper, phosphorus, and B Vitamins.
